Australia vs. Canada PR for IT Couple (QA + SDE) - Need Advice!

My partner and I are IT professionals currently based in India, and we're weighing up our options between Australian and Canadian Permanent Residency. We're hoping to get some honest opinions and insights from those of you who have navigated this journey. Our profiles include me as a QA Automation professional with nearly 10 years of experience (B.Tech CS) and my partner as a Software Engineer with about 6.5 years of experience (B.Tech Mechanical). Based on preliminary assessments, we're looking at 80 points for Australia's 189 visa, 85 for the 190, and 95 for the 491. We haven't started any applications yet, so we're really keen to hear your thoughts. Specifically, we're wondering which country offers better long-term IT job prospects for our specific roles, how long it typically takes to secure a job after landing with PR, and if 80 points is competitive for an 189 invitation these days. Also, if anyone with a mechanical engineering degree has gone through the ACS skill assessment, did you face any particular challenges? Any general advice or regrets would be incredibly helpful!
